Sausage and Egg "Muffins"


I have saved a variety of Pins at pinterest.com to be used at some point in my life. I love the visual inspiration I get there. Today I wanted to make some brunch for my family. We got a bit of a late start to the day and I had to get going to clean the kitchen up. I found this recipe for Sausage Egg Muffin cups that I bookmarked on Pinterest. I didn't have green bell peppers so I decided to alter the recipe by using carrots instead. As long as the carrots are shredded, or chopped small, they will cook just fine. 



They were a huge hit! We ate 6 of the 12 we made. The other 6 are wrapped up for breakfast tomorrow. I served ours with fresh tomato chopped. These are really versatile. I could easily toss the mix in the fridge the night before, or in the freezer in advance. I want to make these a bit healthier in the future. As delicious as the pork breakfast sausage is it's not very heart healthy. Lean ground turkey sausage, turkey bacon, or even no meat at all would be good options.  


Next time I'm going to use egg beaters, or mostly egg whites, no cheese, more vegetables, and add some seasonings to substitute for the flavors the sausage provided.
